Personal note: I loved this producers Kombucha co-ferment and I really wanted to carry this amazing coffee also. This is a special coffee and super complex.

Coffee cherries hand picked, sugar is added during the fermentation phase (see chaptalization process, which originates from winemaking), cherries are dried in the sun 7-10 days until humidity is 24%, then slowly dried in the shade until 12%, de-hulled and manually inspected.
